This easy creamy potato purslane salad with yogurt is a healthier version of this classic side dish. Purslane adds a delicious tang here. Hope you'll give it a try! ????

You'll need

4 potatoes
1 carrot
1 bunch purslane
1/4 bunch dill
8 tbsp yogurt
1 tbsp mustard
1 clove garlic
1 tsp salt
Hot water
1 tsp salt (for boiling potatoes)

Here's how

Boil, drain, and chop the potatoes.
Grate the carrot.
Thoroughly wash and dry the purslane, then finely chop it.
Combine yogurt, mustard, garlic, and salt.
Add veggies and gently toss everything together.
