Ingredients

4 phyllo pastries (50 cm diameter)
5 tbsp of vegetable oil
250 g of minced beef
1 onion
4 carrots
1 tbsp of tomato paste
½ kg of chopped spinach
½ tsp of black pepper
½ tsp of cumin
½ tsp of dried mint
1 tsp of salt
Fresh parsley
2 egg yolks

Preparation

1- For the minced filling; brown 1 finely chopped onion with 2 tbsp of vegetable oil.
2- Add in 250 g of minced beef and cook while mixing.
3- Add 1 tbsp of tomato paste, ½ tsp of black pepper, cumin and dried mint, 1 tsp of salt and some chopped fresh parsley. Turn off the stove.
4- For the carrot filling; combine 4 grated carrots with 1 tbsp of vegetable oil and 1 tsp of salt in a bowl.
5- For the spinach filling; combine ½ kg of chopped spinach with 1 tsp of salt and 1 tbsp of vegetable oil. Drain the excess water out by squeezing with hands.
6- Spread the mince filling on the phyllo pastry and roll.
7- Then spread the carrot filling on the second phyllo pastry and roll.
8- Repeat the same thing with the spinach filling as well.
9- Brush the 4th phyllo pastry with vegetable oil.
10- Place the rolls at the center of the 4th phyllo pastry as 2 of them are side by side and the 3rd one is on top of them.
11- Roll them all together with the 4th phyllo.
12- Cut the final roll into 1 inch thick slices.
13- Place the slices on a parchment lined oven tray and brush with egg yolk.
14- Bake for 40 minutes in an oven preheated at 180 °C.
15- Tri-color pastry is ready to serve.
