This healthy quinoa tabbouleh salad is light, refreshing, and flavorful. It's also super quick and easy, requiring only a few simple ingredients to make! ????????????
And here's a little secret: The longer you let the tabbouleh sit, the better it tastes. ????

You'll need

1 bunch parsley
1/2 bunch fresh mint
2 scallions
3 tbsp walnuts
6 cherry tomatoes
2 tbsp olive oil
Juice of 1/2 lemon
1 tbsp pomegranate molasses
1/2 cup pomegranate seeds
1/3 cup quinoa
1/4 tsp rock salt

1 cup = 200 ml

Here's how

Begin by placing the quinoa in a suitable container. Cover it with enough cold water and let it soak for 30 minutes.
After the soaking time, drain the quinoa and rinse it thoroughly under running water.
Transfer the rinsed quinoa to a saucepan and add plenty of water. Bring it to a boil and cook the quinoa for approximately 15 minutes until it is tender.
While the quinoa is cooking, finely chop the parsley and mint. Dice the scallions, using both the green and white parts.
Finally, dice the cherry tomatoes. Alternatively, you can use one medium-sized tomato instead of cherry tomatoes.
Once the quinoa is cooked, drain any excess water and transfer it to a large bowl to cool down.
Once cooled, add the chopped herbs, pomegranate seeds, walnuts, tomatoes, olive oil, pomegranate molasses, lemon juice, and rock salt. Gently mix everything together.
Transfer the prepared quinoa tabouli to a serving platter and enjoy your meal!
