You'll need

3 potatoes
1,5 cup mozzarella cheese
Some chopped fresh parsley
2 eggs
½ tsp salt
1 tsp ground black pepper

For the filling:
2 tbsp olive oil
350g minced meat
1 onion
1 long green pepper
2 red peppers
1 tbsp tomato paste
200 ml hot water
1 tsp salt
1 tsp ground red pepper
1 tsp ground black pepper

For the top
Mozzarella cheese

Here's how

1. Grate the peeled potatoes using the wider side of the grate.
2. Squeeze out to remove as much water out of the grated potatoes as possible and transfer into a bowl.
3. Add 1,5 cup of mozzarella cheese, chopped fresh parsley, 2 eggs, ½ tsp of salt and
1 tsp of ground black pepper and mix together.
4. Line an oven tray with parchment paper.
5. Spread the potato mixture on the parchment paper into a 1 cm thick layer.
6. Bake at 180 degrees until the entire surface has an even golden brown color.
7. For the filling, start to cook 350g of minced meat with 2 tbsp of olive oil.
8. Then, add 1 chopped onion, 1 chopped long green pepper and 2 red peppers and continue cooking.
9. Add 1 tbsp of tomato paste and mix. Then, add 200 ml of hot water as well.
10. Finally add 1 tsp of salt, 1 tsp of ground red pepper and 1 tsp of ground black pepper. And cook until the water is gone.
11. Spread the minced meat mixture evenly over the potatoes.
12. Then, start to roll with the help of the parchment paper.
13. Sprinkle over grated mozzarella and bake at 180 degrees until the cheese is melted.
14. Transfer into a serving plate and sprinkle with parsley for garnish, slice and serve immediately.
