Selanik Gevreği or Biscottis are well-known cookies in most part of the world. Or has simple ingredients yet flavorful and different texture makes it easy to store, stays fresh for a long time, good company for a glass of tea or cup of coffee.. In Turkey it is common to find in bakeries and patisseries
Ingredients for Selanik Gevreği / Biscotti
3 eggs
3/4 to 1 cup sugar
1/2 cup vegetable oil
orange rind or vanilla extract or powder (about 1 tsp)
3 cup + 2 tbsp flour (don't add all at ones, check for the consistency for somewhat sticky but pylable dough)
3/4 to 1 cup each raisin, chopped walnut or hazelnut, almonds etc.
For the cocoa version: Add 2 heaped tbsp cocoa powder, chocolate chip or chopped chocolate if you prefer. I also added chopped unsalted peanuts to it.
