An easy Chocolate cake you can make with mandarins or orange. The cake is moistened with simple coffee syrup. Then a mandarin cream and mandarin or orange jelly is poured over it. The combination makes it very delicious and it is easy to make and serve too.
Ingredients for Mandarin / Orange Chocolate Cake:
For the cake base:
3 eggs
2/3 cup sugar
the rind of 2 mandarins or an orange
1/4 vegetable oil
1/2 cup milk
1+1/2 cup flour
3 tbsp cocoa powder
1/2 packet (1 tsp) baking powder
1 tsp vanilla powder or essence
22cm X 33cm deep dish baking pan
For the cream layer:
6 tbsp sugar
2 tbsp heaped flour
1 tbsp heaped corn starch
2 cups of milk
the rind of two mandarin
less than 1 tbsp butter
For the coffee syrup:
2 tbsp instant coffee granules
3 tbsp sugar
1 + 1/4 cup water
For the mandarin or orange jelly layer:
juice of mandarin or orange (1 cup) or complete it to 1 cup + 3 tbsp
3 tbsp sugar
2 tbsp corn starch (not heaped)
