Authentic Turkish Fish Dish - Anchovy Pilav / Hamsili Pilav

One of the most Authentic fish dishes of Turkey is Anchovy covered pilaf or as we call it pilav. It has a flavorful, spicy and fluffy pilav in it. The anchovy fillets placed in a ramekins or bigger deep dish pan and filled with pilav. Then you cover the top again with more anchovy fillets and bake it in the oven.. Yummy..
Ingredients for Anchovy Pilav (4-6 servings)
1 kg fresh anchovies.
For the Pilav (If you are using ramekins pilav amount is a bit much but it is also delicious by it's own. Of you use a bigger pie pan you can fill it with more pilav.)
1+1/2 cups good quality rice (Baldo, Osmancık, basmati or other types that don't have much starch in it)
2 medium onions
4 tbsp olive oil
1 tsp all spice (It is one spice not mix)
1 tsp cinnamon
3-4 tbsp dried currants
2-3 tbsp pine nuts (optional)
salt and black pepper to taste
1/3 bunch fresh dill
about 2 cups hot water
butter to grease ramekins or pan and top of anchovies
