Cig Kofte or Turkish style raw meatless bulgur ball is a popular street food of Turkey. The name "cig kofte" means raw meatballs. In the traditional recipe, it has meat along with cracked bulgur wheat. Meat is cooked by adding many spices and kneading by hand for a long time. But as street food, it is commonly made without meat and so it is vegan.
Ingredients For Cig Kofte
1 cup thin bulgur wheat
1 cup of hot water
1 medium size onion
1 tsp salt
about 1/3 cup walnuts
2 cloves of garlic
1 tbsp isot pepper
1 tsp red pepper flakes
1/2 tsp each cayenne pepper, all-spice, cumin
1/4 tsp cinnamon, sumak, ground black pepper
dash of ground ginger
1 tbsp tomato paste
1/2 tbsp red pepper paste
juice of 1/2 to 1 lemon
1 tbsp or more pomegranate juice
about 4-5 tbsp olive oil
