You'll need
3 egg whites (at room temperature)
85 g granulated sugar
2 cups shredded coconut
1 cup = 200 ml
Here's how
In a mixing bowl, combine the room temperature egg whites, granulated sugar, and shredded coconut. Mix everything thoroughly by hand. Note that the consistency of the mixture may vary depending on the size of the eggs. If the mixture is too soft, you can add 1-2 more tablespoons of shredded coconut.
Using an ice cream scoop or your hands, shape the mixture into cookies.
Place the shaped cookies on a baking sheet with some space between them. With these measurements, you should be able to make 9 coconut cookies.
Bake the cookies in a preheated oven at 170 degrees Celsius (approximately 340 degrees Fahrenheit) without the fan setting for about 20 minutes. The cookies are ready when they are lightly browned on top.
Allow the cookies to cool to room temperature before serving. Enjoy your coconut cookies!
