Cornmeal-Crusted Eggplant Fries
You’ll need
3 eggplants
Salt
Ground black pepper
For coating:
Cornmeal
For frying:
Vegetable oil
For serving:
Garlic yogurt sauce
Here’s how
First, place the eggplants on a grill pan and roast them, turning them occasionally.
Once the eggplants are roasted, remove them from the heat and let them cool down.
When they’re cool enough to handle, peel off the skins. Use a fork to gently press and open up the insides.
Sprinkle salt and pepper over the eggplants, then coat both sides with cornmeal.
Fry the cornmeal-coated eggplants in hot oil, turning until they become golden and crispy.
For serving, spread garlic yogurt sauce onto a plate and place the crispy eggplants on top.
Garnish with some chopped parsley, and serve. Enjoy!
