This easy chicken noodle soup recipe will leave you feeling so good, so warm, so cozy. Perfect for chilly days and cold nights as the weather cools down. ????
You'll need
2 chicken thighs
6 cups water (1200 ml)
150g noodles
2 tbsp mixed dried vegetables
1/4 tsp ground turmeric
1/4 tsp ground ginger
1/4 tsp ground black pepper
1/2 teaspoon salt
2 1/2 cups hot water (500 ml)
1 cup = 200ml
Here's how
Start by placing the chicken thighs in a suitable pot. Add water to the pot and let it boil.
Let the chicken thighs simmer for about 1 hour until they are fully cooked. You can check the tenderness with a fork. Then, turn off the heat and transfer the cooked chicken to a separate plate.
Strain the remaining chicken broth in the pot through a sieve and transfer it to another pot.
To the strained chicken broth, add 2 1/2 cups of hot water, mixed dried vegetables, turmeric, ginger, ground black pepper, and salt. Bring the mixture to a boil.
Meanwhile, finely chop the cooked chicken thighs.
Add the chopped chicken and noodles to the boiling broth.
Cook the noodles until they become tender and fully cooked, which should take about 5 minutes.
Your chicken noodle soup is now ready to be served. You can sprinkle some ground red pepper on top if you like. Feel free to add other spices as desired. Enjoy!
