This soy sauce chicken stir fry is quick, easy, and full of flavor. The chicken thighs stay juicy and tender and the flavor goes well with most side dishes. ????????????
You'll need
750g boneless chicken thighs
2 green peppers
2 red peppers
1 onion
1 tsp ground red pepper
1/4 tsp curry powder
1/4 tsp ground black pepper
1 tsp thyme
60ml olive oil
60ml soy sauce
1 cup = 200 ml
Here's how
Cut the boneless chicken thighs into large pieces.
Transfer the cut chicken to a large bowl, then drizzle olive oil over them.
Add ground red pepper, curry powder, ground black pepper, and thyme. Mix well until the chicken is evenly coated with the seasoning.
Once the chicken is well-coated, cover it and let it marinate for approximately 2 hours.
Slice the onion into thin strips, and cut the red and green bell peppers into large pieces.
Heat a non-stick pan on the stove. Once hot, transfer the marinated chicken to the pan.
Spread the chicken evenly on the pan and start cooking over high heat.
If you cook it quickly over high heat, the chicken will cook to perfection without getting too watery. Use tongs to flip the chicken, ensuring both sides are nicely browned.
When the chicken is fully browned, add the sliced bell peppers and onions.
Stir and continue cooking together for a few more minutes until the peppers and onions begin to soften.
When the peppers and onions have softened slightly, drizzle soy sauce over the chicken.
Reduce the heat to low and let it simmer for an additional 1-2 minutes before removing it from the stove. Enjoy!
