A fresh summer salad loaded with chicken, vegetables and rice. Totally addicting and makes the perfect dinner for a busy weeknight. A perfect way to use up leftover chicken and rice.
You'll need
1 cup peas
3 carrots
1 chicken breast
1/2 cup dill
1/2 cup spring onions
2 red peppers
3 green peppers
1 cup canned corn
8-10 pickled gherkins
1 tsp salt
Juice of half a lemon
For the pilaf;
2 cups rice
3 cups hot water (600 ml)
1 tsp salt
60 ml olive oil
1 cup = 200 ml
