You'll need
500 g broccoli
3-4 pickled cucumbers
1 can sweet corn (220 g)
2-3 roasted red peppers
2 spring onions
2 cloves of garlic
3-4 tablespoons olive oil
1/2 teaspoon salt
Juice of a lemon
Here's how
1- Cut 500g broccoli into florets and put them in the steamer.
2- Chop 2-3 roasted red peppers and 3-4 pickled cucumbers into small pieces.
3- Finely chop 2 spring onions.
4- Place the steamer on top of simmering water, close the lid and let steam for 5 minutes.
5- Chop the boiled broccoli into bite-sized florets and put them in a mixing bowl.
6- Add a can of sweet corn, chopped pickled cucumbers, roasted red peppers, spring onions, 2 cloves of garlic, 1/2 teaspoon salt, juice of a lemon and 3-4 tablespoons of olive oil.
7- Toss everything together until the salad is well dressed.
8- Transfer to a serving plate and serve.
