This chickpea salad recipe makes a perfect side dish for almost any meal or a great lunch.

You'll need

2 cups cooked chickpeas
1 red pepper
1 onion
1 tbsp finely chopped parsley
1/4 tsp cumin
1/2 tsp red pepper flakes
1/2 tsp salt
Juice of 1/2 lemon
3-4 tbsp olive oil

1 cup = 200ml

Here's how

Finely dice the onion.
After removing the seeds and membranes, finely chop the red bell pepper.
Chop the parsley into small pieces.
In a mixing bowl, combine the cooked chickpeas, diced onions, chopped red bell pepper, parsley, olive oil, lemon juice, red pepper flakes, cumin, and salt.
Gently mix all the ingredients together.
