Traditional Turkish Tandır Soup is a very healthy recipe with full of mixed beans (chickpeas, white beans and green lentils ) and meat well known in Turkish Cuisine. With its variety of ingredients it can be a main dish with a bowl of salad and a piece of bread.
The recipe also comes from Ottoman Cuisine and there are many versions including vegetarian version.
For the Tandır Soup you will need:
1/2 cup dried chickpeas
1/2 cup dried white beans
1/2 cups green lentils
(soak the beans overnight and boil them separately until somewhat soft)
1/ cup bulgur wheat
1 onion
4 tbsp olive oil + 1 tbsp butter (you may use only butter if you prefer originally it is made only with butter)
3-4 tbsp kavurma meat (recipe follows)
1 tsp ground cumin
1/2 black pepper and hot red pepper flakes (or as much as you wish for the taste)
1 juice of lemon
3 cups meat stock and more boiling water as needed (You may use whole meat stock too)
salt to taste
For the sauce of the soup:
2 tbsp butter
3 cloves of thinly sliced garlic
1 tsp dried mint and red pepper flakes
