You’ll need

For the cake;
3 eggs
½ cup granulated sugar
½ cup all-purpose flour
2 tsp vanilla sugar
1 tsp baking powder


To wet the cake;
200 ml milk

For the cream;
160g white chocolate
400 ml heavy cream
1 tbsp icing sugar

For the cherry sauce;
2 tbsp starch
60 ml water
400g sour cherries
5 tbsp granulated sugar
200 ml water

Here’s how

1- For the cake, beat 3 eggs with ½ cup of granulated sugar until fluffy.
2- Add ½ cup of all-purpose flour, 2 tsp of vanilla sugar, 1 tsp of baking powder and mix everything together.
3- Line an oven tray with parchment paper.
4- Place a springform cake pan on the parchment paper and pour the batter.
5- Bake in an oven preheated to 180° degrees about 30 minutes.
6- Get the baked cake out of the pan with the help of a knife.
7- Place a serving plate upside-down on top of the cake pan and carefully invert the cake onto the plate.
8- Peel off the parchment paper on top of the cake.
9- Place the springform pan again.
10- Pour 200 ml of milk evenly over the cake and let it soak the milk while preparing the cream.
11- Place a large bowl over a pot of hot water.
12- Chop up 160 g white chocolate into small pieces and place in the bowl.
13- Remove from the heat when it is melted completely.
14- In a mixing bowl, beat 400 ml of heavy cream with 1 tbsp of icing sugar.
15- Then, add the melted and cooled white chocolate and keep on beating until thickens.
16- Pour the cream over the cake and spread evenly.
17- Cover the top with cling film and let it rest in the refrigerator for at least 2 hours.
18- For the sour cherry sauce, mix 2 tbsp starch with 60 ml of water and whisk to dissolve.
19- Place 400g of sour cherries in a sauce pan.
20- Add 5 tbsp of granulated sugar, the starch that you dissolved and 200 ml of water.
21- Cook by whisking until boils and thickens.
22- Sour cherry sauce is ready. Transfer it to a bowl so that it cools down faster.
23- When it is cooled, cover the top of the cake with the sauce.
24- Summer cake with sour cherry sauce is ready to serve. Hope you enjoy!
