You’ll need
Green bell peppers
1 onion
1 + ¼ cup rice
1 tbsp tomato paste
Parsley
1 tomato
Ground black pepper
Salt
Dried mint
3 tbsp olive oil
For the top
Tomatoes

600 ml hot water
1 tbsp tomato paste
Olive oil
Here's how
1. Mix together 1 diced onion, 1 + ¼ cup of rice, 1 tbsp of tomato paste, some chopped parsley, 1 diced tomato, ground black pepper, salt, dried mint and 3 tbsp of olive oil.
2. Fill the peppers with the rice mixture. But before that, wash the peppers, remove the stems, then scoop out the seeds. And they're ready for stuffing.
3. Once you've filled the peppers, place them in a medium sized pan.
4. It is better not to overfill the peppers.The rice will need enough room to expand while it cooks. And you cover the opening of each with a slice of tomato.
5. In a bowl, mix 1 tbsp of tomato paste and 600 ml of hot water.
6. Add it to the pan to reach halfway up the peppers and drizzle about 2 tablespoons of olive oil over the peppers.
7. Let the peppers simmer gently with the cover on until the rice is soft.
8. Stuffed peppers are ready to serve. Enjoy!
