You'll need

For the eggplant dip:

2 large eggplants
3 cloves garlic
3 tbsp tahini
3 tbsp olive oil
2 tbsp lemon juice
1/2 tsp cumin
1/2 tsp salt
1/4 tsp ground black pepper

For the garlic bread:

1/2 baguette
2 cloves garlic
4 tbsp olive oil
1 tbsp fresh parsley

For the topping:

1/2 red onion
1 green pepper
8-10 cherry tomatoes
1 tbsp fresh parsley
2 tbsp olive oil
2 tbsp lemon juice
1/2 tsp salt

Here's how

Begin by removing the stems from 2 large eggplants and then cut them in half lengthwise.
Place the eggplants on a baking sheet lined with parchment paper. Drizzle them with olive oil and a sprinkle of salt.
Preheat the oven to 390°F (200°C) without using the fan, and roast the eggplants for approximately 30 minutes.
While the eggplants are roasting, prepare the garlic bread dressing. Mix olive oil, minced garlic, and finely chopped parsley in a bowl.
Cut the baguette in half lengthwise.
Lay the baguette halves on the baking sheet and generously spread the garlic dressing over them.
Once the eggplants are nicely roasted, take them out of the oven and replace them with the baguette slices. Toast the baguette at 390°F (200°C) for about 10 minutes.
After removing the eggplants from the oven, allow them to cool to a touchable temperature before gently peeling off the skin.
Transfer the eggplants to a food processor. Add tahini, olive oil, garlic, salt, black pepper, cumin, and lemon juice.
Process all the ingredients in the food processor until you achieve a smooth puree.
For the salad topping, finely dice the red onion and green pepper.
Cut the cherry tomatoes into halves or thirds, depending on their size.
In a bowl, combine the diced tomatoes, red onion, green pepper, chopped parsley, lemon juice, olive oil, and salt. Mix everything well.
Spread the prepared eggplant puree evenly on a serving plate.
Top it off with the flavorful tomato salad.
Slice the crispy garlic baguette and serve it alongside the eggplant dip. Enjoy!
