This healthy lentil bread is super easy to make and so good for you! ????
There are only a few ingredients you will need to make this delicious gluten-free, lentil bread dish.
Here's what you will need:
1/2 cup red lentils
1/2 cup green lentils
2 eggs
3/4 cup yogurt
60 ml olive oil
5-6 sprigs fresh mint
5-6 sprigs dill
3/4 cup cottage cheese
1 tsp nigella seeds
1 tsp salt
2 tsp baking powder
3 cups hot water (600 ml, to soak the lentils)
Topping:
Sesame seeds
Nigella seeds
1 cup = 200 ml
Here's how
First, place the red and green lentils in a pot.
Add boiling water to cover the lentils. Cover the pot and let it sit overnight.
The next day, drain and rinse the softened lentils thoroughly.
Transfer the drained lentils to a food processor and blend until smooth.
Finely chop the fresh mint and dill.
In a mixing bowl, beat the eggs until foamy.
Add the blended lentils, yogurt, olive oil, cottage cheese, chopped dill, mint, baking powder, salt, and nigella seeds. Mix all the ingredients well with a spatula. You can also add any other spices or herbs you think would complement the recipe.
Grease a baking dish. I’m using a 22x22 cm square baking dish, but you can use any similar-sized oven dish.
Pour the mixture into the baking dish and smooth the top. Sprinkle sesame seeds and nigella seeds over the top.
Bake in a preheated oven at 170°C (340°F) for 40 minutes, without the fan setting.
Once the lentil bread is golden brown on top and bottom, remove it from the oven.
Let it cool to room temperature before slicing and serving. Enjoy!
