Baked Potatoes in Tomato Sauce - Simple but delicious side dish ????
They’re the perfect side to go with a nice roast chicken or beef. Nothing is precooked, you just toss everything together in a baking dish, place in the oven and that’s it! ????

You'll need

3 potatoes
3 tbsp vegetable oil
1 tbsp tomato paste
1 tsp salt
1 tsp red pepper flakes
1 tsp thyme
180 ml water

Here's how

Start by peeling the potatoes with a knife or a peeler.
Then, dice the potatoes into small cubes.
In a suitable bowl, combine the tomato paste, salt, red pepper flakes, thyme, and vegetable oil.
Add water and whisk the mixture until all the ingredients are thoroughly combined.
Mix the diced potatoes into the sauce until the potatoes are fully coated.
Transfer the potatoes to a suitable baking dish and spread them out evenly using a spoon.
Preheat your oven to 200 degrees Celsius (392 degrees Fahrenheit), and bake the potatoes without the fan for approximately 50 minutes.
Once the potatoes are nicely browned on top, they are ready. Enjoy!
