You’ll need

1 cup rice
½ cup cashews
1 tbsp butter
1 tbsp oil
1 tsp curry powder, heaped
½ tsp ground black pepper
1 cube chicken bouillon
1 ½ cup hot water
1 tsp salt

Here is how

1- Pour the rice into a wide bowl and let it soak in hot water for 30 minutes or so.
2- Heat butter and oil in a medium pan.
3- Add the cashews and cook for 2-3 minutes, stirring constantly.
4- Add the rice and stir thoroughly until the grains are coated with the oil.
5- Add the curry powder and black pepper and stir.
6- Add hot water, chicken bouillon and salt.
7- Cover and bring to a boil.
8- Reduce the heat to low and let the rice slowly simmer until the liquid is absorbed.
9- Take the pan from the heat. Open the lid and cover the top of the pan with a paper towel, then replace the lid. This will absorb excess moisture and allow the rice to continue steaming at an even pace.
10- Before serving, open the lid and gently stir the rice to loosen the bottom and separate the grains.
