This lemon cake recipe is light, fluffy, full of fresh lemon flavor and so easy to make!
It is made completely with simple pantry staples and no box mix. Absolutely perfect! ????????
You'll need
3 eggs
1 cup granulated sugar
125 ml vegetable oil
1/2 cup plain yogurt
Zest of 1 lemon
Juice of 1 lemon
2 tsp baking powder
2 tsp vanilla sugar
2 cups all-purpose flour
1 cup = 200 ml
Here's how
Whisk eggs and granulated sugar with a mixer until they become white and foamy.
Add vegetable oil, yogurt, lemon juice, and lemon zest. Mix again.
Incorporate all-purpose flour, baking powder, and vanilla sugar into the mixture.
Mix until the batter is well-combined.
Pour the prepared batter into a greased and floured cake mold.
Bake in a preheated 160°C (320°F) oven for approximately 40 minutes.
Allow the cake to cool to room temperature after removing it from the oven.
Invert the cake onto a serving plate.
Optionally, decorate the top of the cake with powdered sugar and grated lemon zest.
Slice and serve. Enjoy!
