Kazandibi is Turkish pudding dessert with caramelized layer. It is traditional and common to serve in Turkish restaurants. In old recipe it has chicken breast in it that has to be very fresh in order to give it's unique texture to the pudding. This is a common version that you can make at home and enjoy. After it is caramelized in the pan or tray and cooled you serve it by rolling it or just upside down.
Ingredients for Kazandibi - Caramelized Pudding
2 full tbsp all purpose flour
1 heaped tbsp corn on wheat starch
1 cup or less sugar
1 litre + 1/2 cup whole milk
1/2 tsp ground mastic gum (optional) - caramel bottom also will give flavor.
For the bottom of the pan:
About less than 1 tbsp butter
2 tbsp sugar or powdered sugar
1/2 tsp ground cinnamon
