Easy LEMON COOKIES

You'll need

For the Cookie Dough

150 g of softened butter
1 cup of granulated sugar
60 ml of fresh lemon juice
3,5 cups of all purpose flour
2 tsp of baking powder
2 tsp of vanilla sugar
Lemon zest
1 egg

To decorate
Icing sugar
Lemon sauce

Here's how

1- In a whisking bowl, beat 150 g of softened butter with 1 cup of granulated sugar and zest from 3 lemons.
2- Add in 1 egg and 60 ml of fresh lemon juice and continue beating.
3- Add in approximately 3,5 cups of all purpose flour, 2 tsp of baking powder and 2 tsp of vanilla sugar. Add the flour gradually while kneading.
4- Take pieces from the dough, roll into balls and cover with icing sugar.
5- Place the balls on a parchment lined baking tray.
6- Bake for 25 minutes in an oven preheated at 170 °C.
7- After cooled down fully, dust the cookies with icing sugar.
8- Decorate as desired and serve.
9- Enjoy!
