Here is a quick and simple strawberry galette recipe that will have you making pastry like a pro, even if you've never touched a rolling pin before! ????

You’ll need
For the galette dough;
125g butter, cold
1½ tbsp granulated sugar
A pinch of salt
6 heaped tbsp all-purpose flour
For the hazelnut filling;
1 tbsp butter
2 tbsp granulated sugar
1 cup whole hazelnuts
For the strawberry filling;
Fresh strawberries
1½ tbsp cornstarch
1½ tbsp granulated sugar
Here’s how
1. In the bowl of a food processor, combine 125g of cold butter, 1½ tbsp of granulated sugar, a pinch of salt and 6 heaped tbsp of all-purpose flour. Pulse until the dough comes together.
2. Shape the dough into a ball and wrap it in plastic wrap. Refrigerate for at least 30 minutes.
3. Add 1 tbsp of butter, 2 tbsp of granulated sugar and 1 cup of whole hazelnuts to the food processor. Pulse until the mixture resembles coarse sand.
4. In a large mixing bowl, combine the sliced strawberries, 1½ tbsp of cornstarch and 1½ tbsp of granulated sugar. Cover with plastic wrap and let it chill in the refrigerator.
5. Sandwich the dough between two sheets of parchment paper. Using a rolling pin, roll the dough into a circle.
6. Gently remove the parchment paper and transfer the dough onto the baking sheet together with the parchment paper.
7. Spread the hazelnut filling over the top of the dough evenly, leaving about a 3 to 4cm border around all the edges.
8. Place the chilled strawberry filling.
9. Using your fingers, gently fold up the sides of the dough over the edges of the filling.
10. Brush the edges of the galette with remaining strawberry juice.
11. Finally sprinkle sugar evenly over the sides.
12. Bake in an oven preheated to 170 degrees, about 25 to 30 minutes, until the crust is browned everywhere and fruit is softened.
13. Set the galette aside to cool completely before serving. To serve, slice the galette into wedges and top with whipped cream, sprinkled with some powdered sugar, or a scoop of ice cream if desired.
14. Enjoy!
You can use apples, peaches, plums, blueberries or combine two or three types. You can also play around by adding fresh spices, say - cinnamon, nutmeg.
