4 medium potatoes
1 cup grated mozzarella cheese
1 egg
3 tbsp flour (adjust as needed)
1 tsp salt
1/2 tsp ground black pepper (optional)
Vegetable oil (for frying)

1 cup = 200 ml

Here's how

Start by grating the potatoes using the coarse side of the grater.
Squeeze the grated potatoes with your hands to remove excess water.
Add flour, egg, grated cheddar cheese, salt, and optional black pepper to the potatoes. Mix well with a spoon until fully combined.
Heat some vegetable oil in a suitable frying pan.
Drop spoonfuls of the potato mixture into the pan, spacing them apart. Gently press down with the back of the spoon to flatten each fritter slightly.
Fry the fritters over medium heat, turning them over to cook both sides. Avoid low heat as it will make them absorb too much oil, and avoid high heat as it will burn them quickly. Keep the heat controlled.
Once cooked, place the fritters on a plate lined with paper towels to absorb the excess oil.
Continue frying until all the mixture is used up. The fritters are now ready to serve.
Serve the fritters hot with a side of greens and, if desired, a yogurt sauce. Enjoy!
