You'll need

For the dough:
125g butter
1/2 cup granulated sugar
1 egg
1 tsp baking powder
2 cups all-purpose flour

For the peach filling:
4 peaches
1/2 cup granulated sugar
1 tablespoon cornstarch
1/4 cup cold water
2 tsp vanilla sugar

1 cup = 200 ml

Here's how

Start by thoroughly washing the peaches, then peel them finely and dice them after removing the pits.
Place the diced peaches into a non-stick pan.
Sprinkle sugar on top of the peaches, then begin cooking while stirring.
In a separate bowl, dissolve cornstarch in cold water, stirring until it becomes smooth.
Add the prepared cornstarch mixture into the simmering peaches. After adding vanilla sugar, mix it in.
Continue cooking for an additional 1-2 minutes until the mixture thickens. Then, remove the peach sauce from the heat and let it cool on the side.
In a mixing bowl, combine softened butter, egg, sugar, baking powder, and flour. Start kneading the mixture.
Cover the dough with plastic wrap and allow it to rest in the refrigerator for approximately 15-20 minutes.
Place the dough on a floured surface and set aside one-third of it.
After kneading the larger portion of the dough on the countertop and forming it into a ball, start rolling it out with a rolling pin or pastry roller.
Once you've rolled out the dough, carefully transfer it to a pie pan without breaking it.
Use a fork to create small holes in the base of the dough to prevent it from puffing up during baking.
Evenly pour the cooled peach filling into the pie crust.
Roll out the remaining one-third of the dough in the same manner, then cut long, thin strips from it.
Create a lattice pattern on top of the pie by placing the cut dough strips across it.
To ensure the pie's edges look neat, you can use a spoon to trim and shape them.
Bake the prepared pie in a preheated oven at 160°C (320°F) for approximately 40 minutes.
Once done, you can serve the peach pie either warm or chilled. Enjoy!
