You'll need
2 eggs (set one of the yolks aside)
1 cup of crushed hazelnuts
3 cups of all purpose flour
250 g of softened butter
7 tbsp of semolina
7 tbsp of icing sugar
2 tsp of baking powder
2 tsp of vanilla sugar
Syrup
600 ml (2,5 cups) of granulated sugar
One slice of lemon
600 ml of water
Here's how
1- For the syrup: combine and boil 600 ml of granulated sugar with 600 ml of water in a medium sized pan.
2- Add one slice of lemon and boil for 5 more minutes.
3- Let the syrup cool.
4- In a whisking bowl, mix 250 g of softened butter with 2 eggs (set one of the yolks aside).
5- Add in 7 tbsp of semolina, 7 tbsp of icing sugar, 2 tsp of baking powder, 2 tsp of vanilla sugar and continue mixing.
6- Add 1 cup of crushed hazelnuts and approximately 3 cups of all purpose flour gradually while mixing.
7- Take pieces from the dough and give them an oval-shape.
8- Place the ovals on a parchment lined oven tray and brush with the egg yolk that you set aside. Draw lines with the help of a fork.
9- Using these ingredients we had 35 cookies.
10- Bake for 25 minutes in an oven preheated at 170°C.
11- Transfer the cookies to an ovenware and pour the syrup over them.
12- Let the dessert absorb the syrup fully.
13- Decorate as desired and serve.
14- Enjoy!
