Ingredients
2 x 50cm diameter of round phyllo pastry
2 tbsp of tomato paste
150 ml of water
150 ml of vegetable oil
Juice of a small grated onion
2 tbsp of corn flour
1 chopped garlic clove
1/2 tsp of each; dried mint, cumin, dried thyme, red pepper flakes, salt
Preparation
1- In a bowl, combine 2 tbsp of tomato paste with 150 ml of water, 150 ml of vegetable oil, juice of a small grated onion, 2 tbsp of corn flour, 1 chopped garlic clove and 1/2 tsp of; dried mint, cumin, dried thyme, red pepper flakes and salt.
2- Place the phyllo pastry on the kitchen counter and coat half of it with the dressing.
3- Fold the non-dressed part of the phyllo pastry over the dressed part and coat the new surface with the dressing as well.
4- Finally flip the phyllo and coat the last surface.
5- Cut the phylo into squares and then cut again diagonally to form triangles.
6- Line a baking tray with parchment paper.
7- Place the triangles on the tray.
8- Bake for 6-7 minutes in an oven preheated at 180°C and then continue baking at 120°C until triangles are all crispy.
9- Crunchy phyllo nachos are ready to serve.
10- Serve with a dipping sauce.
